Kale Salad with Cilantro Dressing
*The 2013 Harvest Day Hands Down Kid Favorite!*
Kale de-stemmed and chopped into small pieces
Sliced onion (optional)
Diced and roasted butternut squash (see below)
Mix ingredients together then massage the dressing into the kale and vegetables.
Roasted Butternut Squash:
Peel squash and remove the seeds
cut into medium dice
toss with olive oil and salt
Roast at 350 for about 1/2 hour or until soft.
1 1/4 cups (packed) coarsely chopped fresh cilantro, leaves and stems
1/2 cup olive oil
5 tablespoons apple cider vinegar
2 garlic cloves, peeled
